And then all of a sudden, I see things differently.
Since making this announcement, I’m not just thinking about what tastes good anymore. I have to think about what looks good. What smells good.
And then it has to be priced good, so I can make a profit.
Does it fit the concept? The vision?
There is a vision, right?
Indeed, there is a vision.
I’d like the operation to represent who we are. Casual. Colorful (ha!). Not too orderly and propped, but still put together. Does this photo convey all that?
I want the food to be delicious. Balanced. Beautiful. Bonus if it includes beer. I mean, there is a brewery on site. Small plates are part of my vision. Simply put, it’s how I like to eat. I envision folks sitting at the bar, sipping their beers. I see them ordering this, and that… and the other thing, and then sharing it with their friends.
I also envision a garden, somewhere, where I can yank out what’s ready and throw it into my food. If I garden it myself, then I don’t even have to pay for it. (My vision includes keeping the overhead down.)

And then lastly, I envision some really good mopping bread. I’d use yesterday’s leftover French bread (because there will always be leftovers), and toast it on the skillet. With butter. The toast will be warm, crunchy, and salty, and it will appear everywhere on the menu… similar to the way French fries get onto all the other menu items all over town.
Because my vision needs a different angle.
