Let’s talk about Salmonella for a minute.
You can’t tell by looking at an egg whether or not it contains Salmonella (a bacteria that is the number one culprit in foodborne illness).
Further, chickens carry the bacteria in their bodies and pass it to the forming egg yolk and whites while the egg is forming in the ovaries. Additionally, chickens can pass bacteria to the (porous) eggshell when the egg is laid. Therefore, simply washing an eggshell before consuming it raw or undercooked will not prevent someone from coming into contact with Salmonella.
Fortunately, we’ve never become ill by eating one of our own raw or undercooked backyard chickens eggs, and we hope to keep it that way.
And now that our household includes “an older American” and two kids under the age of 5, we need to be extra careful. Now, when we need to consume eggs raw or undercooked, we’ll pick up a package of Davidson’s Safest Choice Pasteurized Chicken Eggs. We do it for the peace of mind.
Lat weekend, we cracked a couple of these eggs to put into a pot of nabeyaki udon. Pasteurized eggs are perfect in this application because we eat the eggs soft. And now, there’s no risk of Salmonella poisoning.
