Strawberries are most beautiful when they’re plucked straight out of the ground… but since they have a shelf life of about six and a half minutes, what would you do with them once they became a little “old” or “bruised?”
Someday, we’re gonna to get around to opening The Bistro, and when we do – we hope to explore different ways of serving garden edibles.
So -
One could imagine my delight when I came across Jamie’s Meyer Lemon Strawberry Muffins recipe. Since the strawberries are baked into the muffin, they’re perfect for the day-old or slightly-bruised strawberries that won’t look as good if served fresh. And this recipe will use up about two cups of them.
Someday, these are going to be a beautiful addition to the RGB’s bakery. In the meantime, because they’re exactly the kind of muffins the RGB would serve, they have a permanent space in our recipe index.
Sunday Shout-Out: Jamie from mybakingaddiction
I can’t remember how I came across Jamie’s baking blog, but I’m so glad I did. And if you aren’t already familiar with it, I hope you take a peek because the photography and edibles are not only delicious to look at, they’re delicious to eat.
As if that weren’t enough, Jamie is not only a kind soul, but a champion of the blogging community. She’s gracious with her shout-outs, giving with her recipes and generous with her time.
In fact, when I was recently asked to contribute baked goods for our office’s Great American Bake Sale (to end childhood hunger), I emailed Jamie for suggestions and kindly got a note back. Because I couldn’t decide, I ended up offering not one, not two, but FIVE of Jamie’s recipes:
Snickerdoodle Blondies: http://www.mybakingaddiction.com/snickerdoodle-blondies/
Big Chocolate Chip Cookies: http://www.mybakingaddiction.com/bigchocolate-chip-cookies/
Chewy Lime Sugar Cookies: http://www.mybakingaddiction.com/chewy-lime-sugar-cookies/
Cinnamon Swirl Cupcakes: http://www.mybakingaddiction.com/cinnamon-swirl-cupakes/
Lemon Cupcakes: http://www.mybakingaddiction.com/lemon-cupcakes/
They were all winners with the crowd. And as a group, we raised over $600.00 for the charity.
Items the other ladies in the office contributed: From top left: Upside-down pineapple cake, apple streusel tarts, rice krispy treats, cinnamon streusel bread, apple cookie, cinnamon bread, bake sale guests, lemon coconut squares, peanut butter chocolate balls, me in front of my goods, banana walnut bread, more chocolate balls, cinnamon swirl coffee cake, assorted guest purchases, gerbera daisy, guests, red velvet cupcakes, pinwheel strawberry slice, Louisiana pudding cake, unknown log.

This is just the sweetest shout out ever! I truly appreciate your kind words, they made my day! Your baked treats look fabulous, I am so happy everything turned out so well. Great job supporting Share Our Strength! Have a fantastic week!

Those look really absolutely delicious.
My baking game is seriously sub-par. I don’t even own a cupcake pan. It’s bad.
Yummmm! Now I know what to do when the kids don’t eat all the strawberries in time. We have a few strawberry plants in our garden but so far we eat them as they grow. They are too delicious! I might need to buy some strawberries just to try this recipe.
