I'm so jealous of your carrots! Last year mine didn't grow so I didn't bother with them this year. I should have though because my garden is fantastic this year thanks to a few trucks full of cow manure I tilled in last fall.

As usual, all the food looks amazing and I will have to try the soup.

I would agree with the pioneer stew thought.

And, don't you love Alton Brown. He's my all-time favorite food geek. You come in second. ;-)

I'm with you, I just use the whole onion. Besides it adds more flavor, which can't hurt.
Don't you love it when you come upon a recipe that fits the bill just right!
Your carrots are amazing! What are feeding that garden?
Glad it all worked out. Thanks for sharing. I adore a good soup recipe.

ALWAYS err on the side of more flavor in our cooking. If it is a spice or herb or onion or garlic or pepper, we tend to over-apply, especially if we're just "rounding up" or finishing off a larger unit of measure. If it is a base ingredient (pasta, rice, broth) we'll usually stick to the recipe.

As to jerky, it probably comes from the same origin as many pioneer stews. They could carry dried meats and jerky across the country on their wagons or on cattle drives or even in their packs, and by adding some local veggies or roots or onions and some water and cooking it over a fire, they could mix up the meals a bit! I think I learned that from Alton Brown...
